Chuck Palahniuk's essays contain a lot of minimalist techniques, among other things. John Gardner's ART OF FICTION has some interesting things to say on the minimalist sub-genre, mostly said in passing but enough to mine ideas from.

There are all the collections by Gordon Lish edited folk; Raymond Carver, Amy Hempel, Barry Hannah, Don Delillo etc. that could used as case studies. There's that draft of Carver's story showing the Lish edits in Harper's or NYT online, there's Frederick Barthelme's NYT essay.
