I think it's mostly the ones called "Gospel of Thomas," or whoever.
But, by my understanding, you could just write a story about a post-metal band called The Gnostic Gospels, so if Bel and the Dragon isn't technically one of the "gnostic gospels," but you want to include it, you'll probably be okay.
